The University of Guam Land Grant Extension Service will offer residents a unique opportunity to learn about food self-sufficiency through a hands-on poultry processing workshop on Saturday, Sept. 13. The event will take place from 8:30 a.m. to noon at the UOG Yigo Research & Education Center.

The workshop, led by UOG animal and meat scientist Dr. Jeng-Hung Liu, will begin with a lecture covering USDA food safety guidelines and proper processing techniques. Participants will then gain practical experience by processing a live chicken, including slaughtering, defeathering, gutting, butchering and packaging.

Following the processing session, attendees will learn how to roast and smoke their freshly harvested chicken. Roasted chickens will be ready for pickup later the same day, giving participants the full farm-to-table experience.

The event is part of a U.S. Department of Agriculture grant project to grow the meat and poultry processing workforce on island. Registration is $35 per person and includes one live chicken.
